{Honey Lime Chicken}
Ok this chicken is so easy to prepare and to make! Derek and I have made dinner for his family a few times but we've never prepared a meal for my family. I intended to make this with shrimp (what the original recipe called for) but since I was making it for my family, and my dad doesn't like shrimp, we substituted with chicken.The original recipe is from The Dough Will Rise Again, but I made some adjustments to it.
{Recipe}
serves 4-6
1 pound chicken {thawed and cut into small bites}
1/2 cup olive oil
4 T honey
juice of two small limes, or half a large lime (4-5 T)
zest of two small lime, or one large lime
4 cloves garlic, smashed
kosher salt
tsp black pepper
tsp red pepper flakes
1.) In a large bowl, combine all the marinade ingredients. When everything is well-combined, add the chicken, cover with cello. Place it in the fridge.
2.) Let the chicken marinate for 30-45minutes, flipping the chicken once or twice during that time, so that all the chicken stays evenly covered in the marinade.
3.) When you’re ready to cook, take the chicken out of the fridge and let them sit at room temperature for about 10 minutes. Heat a large skillet over medium-high heat(no need to add any oil or butter to the pan. The marinade has enough oil to keep the chicken from sticking to the pan)
4.) Add your chicken to the pan. Cook for like 40 minutes or until the chicken is golden.
I served the chicken on white rice with cooked veggies on the side.
