Milanesas & Chimichurri

So Jessica's family is Argentinian. A popular South America dish is Milanesas with Cimichurri. This is basically any pounded meat breaded and fried, and an olive oil/parsley dressing. Well I think that Jessica's mom makes the best Milanesas around (I've never had them anywhere else). I have watched her make them numerous times and have always wanted to try myself, so today I felt moved to make some myself.

{Milanesas}

10 thawed boneless chicken breast
1c bread crumbs
2tsp oregano
1/2c flour
1tsp salk
1/2tsp ground pepper
2 eggs
EVOO

Mix the breadcrumbs with the oregano and pour into a small baking dish. In a medium size bowl, mix together the flour, salt and pepper.


Pound the chicken breast out. (To do this, I placed my meat cutting board on a dishtowel  I laid out a few chicken breast on the board and covered it with clear plastic wrap. Then I took a serving spoon and smashed them so they were flat.)

Whisk the eggs together in a bowl.

Next dip the chicken in the flour/pepper mixture. Dip each piece into the egg, then place into the breadcrumbs, making sure to coat both sides thoroughly.

Heat 1/2 inch of oil in a large skillet on medium-high heat.

Fry each chicken breast for about 3-4 minutes on each side, or until breading is crispy and chicken has cooked through.

{Chimichurri}

bunch cilantro finely chopped
bunch parsley finely chopped
2 cloves garlic finely chopped/minced
1/2c Olive Oil
1 1/2tbs Vinager
1 1/2tsp salt
sprinkle red pepper flakes
1/2tsp ground black pepper

Mix together.

Drizzle some chimichurri sauce on the Melanesas and enjoy!!!
When there are left overs Jessica makes sandwiches with them. All she does is puts some mayo and chimichurri sauce on two slices of bread, layer with sliced tomato, and lettuce...enjoy!!!









{Baked Apple with Oatmeal & Brown Sugar}


These baked apples are a treat! If you like apple pie, and even if you don't like apple pie you're going to LOVE these! I made these for Derek's birthday last month and became hooked.

1/2c oatmeal
1/2c brown sugar
1 tsp. cinnamon
pinch of ginger
pinch of nutmeg
1/4c melted butter
fugi apples (any apples work, but I find that fugi are the best so far)

Preheat oven to 375F. Mix oatmeal, brown sugar, cinnamon, ginger, nutmeg, and melted butter together. Consistency is lumpy.
I forgot to take a pic of the dry ingredients with the butter, but this is what it is supposed to look like somewhat.
 Wash and peel apples. Cut apples in half and spoon out the center. (I used a melon baller) Add a small spoonful of butter in the center of the apple.

 Fill the apple halve with your oatmeal & brown sugar mixture. Bake for about 35 minutes.


Serve with whipped cream, ice cream, or carmel....and ENJOY!

Honey Lime chicken


{Honey Lime Chicken}

Ok this chicken is so easy to prepare and to make! Derek and I have made dinner for his family a few times but we've never prepared a meal for my family. I intended to make this with shrimp (what the original recipe called for) but since I was making it for my family, and my dad doesn't like shrimp, we substituted with chicken.

The original recipe is from The Dough Will Rise Again, but I made some adjustments to it.

{Recipe}

serves 4-6
1 pound chicken {thawed and cut into small bites}
1/2 cup olive oil
4 T honey
juice of two small limes, or half a large lime (4-5 T)
zest of two small lime, or one large lime
4 cloves garlic, smashed
 kosher salt
tsp black pepper
tsp red pepper flakes

1.) In a large bowl, combine all the marinade ingredients. When everything is well-combined, add the chicken, cover with cello. Place it in the fridge.

2.) Let the chicken marinate for 30-45minutes, flipping the chicken once or twice during that time, so that all the chicken stays evenly covered in the marinade.

3.) When you’re ready to cook, take the chicken out of the fridge and let them sit at room temperature for about 10 minutes. Heat a large skillet over medium-high heat(no need to add any oil or butter to the pan. The marinade has enough oil to keep the chicken from sticking to the pan)

4.) Add your chicken to the pan. Cook for like 40 minutes or until the chicken is golden.

I served the chicken on white rice with cooked veggies on the side.

Start of Something New

Hi friends,
We are two girls who were looking to find a new challenge for the new year. We both liked the idea of creating a blog to share our experiences, recipes, crafts, photography and more. Our blog name was inspired by the song by Tyrone Wells, "And The Birds Sing." We both love birds and we thought this song was fun and uplifting. Give it a listen..... And the Birds Sing

I love life. I try to make the best of every situation, give everyone the benefit of the doubt, and ultimately try to be an all around positive person to be around.

I'm a college student, studying to be a preschool teacher. Kids and kid crafts are two of my favorite things. I'm a Pinterest addict (I'm sure most of you are too!). I Love cooking and photography but for some reason never take pictures of the food I cook. Hopefully this blog will encourage me to start taking pictures of my food.

I come from a fairly large family of 6, and have three younger brothers. I love Derek, my boyfriend, and my dog, Montana. Jesus is my friend and greatest supporter.


I hope this blog gets your creative juices flowing and helps to inspire you!

I'm  in love- in love with life, laughing, and finding God in all places. I recently graduated from college with a teaching credential and have joined the masses in searching for the job God called me to do-teaching . In the meantime, I fill my hours with hugging my boyfriend, Michael, quoting movies with my best friend Katie, and scanning Pinterest for sewing ideas, recipes, and quotes that inspire. Currently, I am on a mission to learn how to cook better and do my own laundry. A mighty mission to have, I know, and one I believe will be loads of fun! 
I am enjoying this life I am living. I have two brothers (one of which is my twin), a sister, and a dog named Louie who is a bit of a frady-cat at times. I am also an aunt, great aunt, registered voter, substitute teacher, person who sews, library card user, and in the words of Frank Sinatra, " I've got the world on a string, I'm sitting on a rainbow. Got that world wrapped around my finger. 
What a world, what a life, I'm in love!"
